Tomato Corn Salsa

Ingredients
  • 1 cup fresh or frozen corn kernels
  • 2 cups diced tomatoes
  • 2 tablespoons diced red onions
  • ¼ cup diced green bell peppers
  • 1 tablespoon chopped fresh basil
  • ½ to 1 fresh green chile, minced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon cider vinegar
Instructions
  1. Blanch the corn in boiling water to cover for 1 to 2 minutes, until just tender.
  2. Drain. In a large bowl, combine all of the ingredients and set aside for 15 to 20 minutes to allow the flavors to develop.
  3. Add salt, if desired, and serve at room temperature.
